Besides making copies of all the stuff in the envelope, I send all rebate requests worth more than $20 or $25 using Certified Mail, without a return receipt, for about $2 additional postage.

If there's ever a problem where the vendor claims they never got the rebate, you can always get a copy of the receipt from the USPS for about $5.
